I’ve cooked sweet coconut biscuits before, but only with coconut sawdust. This time I decided to experiment with coconut flour. To make my recipe even more true to its name, I added coconut sugar and coconut butter. The biscuits turned out extremely fragrant and delicate, and my daughter liked them very much. You can experiment with the proportions of the coconut flour and sawdust – you can add 50 g flour and 150 g sawdust, for example. Or, increase the amount of coconut sugar if you want the biscuits to become sweeter. If you keep the amount of flour or increase it do not change the quantity of eggs, however – the coconut flour requires more fluids, as we have already mentioned. And now, let’s check the recipe.
Sweet coconut biscuits
What you`ll need:
100 g coconut flour
100 g coconut sawdust
2 tablespoons coconut sugar
50 g coconut butter, melted
How to cook it:
Preheat your oven to 180°С and prepare a baking tray with baking paper.
Mash the banana and mix with the melted butter. Stir, add the rest of the products and mix. From the obtained sticky dough, make small balls using a spoon and transfer to the tray. Press with the spoon to get thin biscuits.
Bake for about 10-15 minutes until golden. Let them cool on a wire rack before serving.
